Chickpea Veggie Burrito


Ingredients:

Makes 2 servings

  • 1 of your favorite potato

  • 1 Bell pepper, chopped

  • 1 can Chickpeas, rinsed and drained

  • 1 can Corn

  • 1 tsp. Ground cumin

  • 1 Avocado, Sliced

  • 2 medium Tortillas


Instructions:

  1. Cut potatoes into bite-sized chunks and place on baking sheet. Bake until soft (approx. 30 min) flipping halfway through.

  2. When potatoes are finished, place ingredients on tortilla and enjoy! You may add some salsa for more flavor.
