Chickpea Wrap


  • 2 15oz cans of chickpeas rinsed and drained.

  • 2-3 tbsp fresh salsa

  • 2 tbsp tahini

  • 1-2 tbsp fresh lemon juice to taste

  • 1 tsp garlic powder

  • 1/2 cup cilantro, chopped

  • Large tortillas

  • Spinach

  • ½ avocado per wrap


  1. Put the chickpeas into a blender or a food processor and pulse until the chickpeas are mostly broken down. You can also use a fork or potato masher. Chickpeas should still be chunky but holding together.

  2. Combine all ingredients in a bowl except for avocado and spinach and mix well. You may adjust the amount of salsa or lemon juice according to your taste.

  3. Place a large spoonful of chickpea mixture onto a wrap, top with spinach and avocado, roll up and enjoy!
