2 15oz cans of chickpeas rinsed and drained.
2-3 tbsp fresh salsa
2 tbsp tahini
1-2 tbsp fresh lemon juice to taste
1 tsp garlic powder
1/2 cup cilantro, chopped
½ avocado per wrap
Put the chickpeas into a blender or a food processor and pulse until the chickpeas are mostly broken down. You can also use a fork or potato masher. Chickpeas should still be chunky but holding together.
Combine all ingredients in a bowl except for avocado and spinach and mix well. You may adjust the amount of salsa or lemon juice according to your taste.
Place a large spoonful of chickpea mixture onto a wrap, top with spinach and avocado, roll up and enjoy!
