1 Serving Brown Rice
1 whole-wheat or gluten-free tortilla
2 tablespoons hummus
1 cup spinach
½ cup black beans drained and rinsed
½ half carrot, thinly sliced
¼ bell pepper, thinly sliced
¼ cucumber, diced
¼ avocado, sliced
Cook the brown rice according the directions on the package.
Placed tortilla on a plate. You may warm it in the microwave first if desired.
Spread the hummus in the middle of tortilla and top with all ingredients.
Fold tortilla and enjoy!
