Hummus Veggie Wrap


Ingredients:

  • 1 Serving Brown Rice

  • 1 whole-wheat or gluten-free tortilla

  • 2 tablespoons hummus

  • 1 cup spinach

  • ½ cup black beans drained and rinsed

  • ½ half carrot, thinly sliced

  • ¼ bell pepper, thinly sliced

  • ¼ cucumber, diced

  • ¼ avocado, sliced


Instructions:

  1. Cook the brown rice according the directions on the package.

  2. Placed tortilla on a plate. You may warm it in the microwave first if desired.

  3. Spread the hummus in the middle of tortilla and top with all ingredients.

  4. Fold tortilla and enjoy!
