Rainbow Veggie Wrap


Ingredients:

Makes 2 servings

  • 1 collard green

  • ¼ cup shredded carrot

  • 2 Tbsps. Shredded purple beet

  • ¼ Sliced yellow bell pepper

  • 1 radish

  • ¼ avocado

  • ½ cup mashed chickpeas

  • 1 tbsp. Healthy Hemp Seed Ranch Dressing (recipe below)


Instructions:

  1. Mash chickpeas with a fork or lightly blend in blender.

  2. Add all ingredients in the collard green, wrap, and enjoy!






Hemp Seed Ranch Dressing:

Ingredients:

  • ¾ cup hemp seeds

  • ½ cup plain, unsweetened plant milk

  • ½ tbsp lemon juice

  • 1 tbsp parsley

  • 1 tsp dried dill

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • Pinch salt

Instructions:

Blend all ingredients in a blender until smooth. Store the rest in fridge for future use.
