
Ingredients:
½ cup quinoa
½ cup shelled edamame
4 generous handfuls of arugula
1-2 cups of watermelon
½ cup blueberries
1 carrot peeled and shredded
1 avocado diced
1 handful sliced almonds
Mint as desired

Instructions:
Cook quinoa and edamame according to instructions on the package. Add all ingredients together in a bowl and enjoy!
Dressing:
Ingredients:
2 tablespoons tahini
2 tablespoons fresh lemon juice
1 tablespoon extra-virgin olive oil
1 tablespoon water
1 teaspoon freshly grated ginger
Pinch sea salt
¼ teaspoon freshly grated black pepper
Instructions:
Wisk together all ingredients in a bowl and pour over bowl.
