Tofu Scramble


Makes 4 servings,

  • 1 package 14 oz. extra firm organic tofu

  • 1 yellow onion chopped

  • 1 bell pepper chopped

  • 1 cup spinach

  • ½ cup mushrooms chopped

  • 2 cloves garlic minced

  • Salt and pepper to taste

  • 2 tablespoons nutritional yeast

  • 1 Tablespoon Garlic Powder

  • ¼ tsp. of turmeric


Drain and wrap tofu in clean towel and squeeze out excess water. Heat 1 tbs oil in pan. Crumble tofu into the pan. Add the onion and the bell pepper, cook for 5 minutes, stirring occasionally over medium heat. Add the garlic, mushroom, nutritional yeast, and turmeric. Cook until the vegetables are soft and onions are translucent, stirring occasionally. Add the spinach and cook for 1-2 more minutes.

Salt to taste and serve with 1 slice of whole wheat toast.
